Sago is a starch extracted from the spongy center of various tropical palm stems. Other names include Manioc sago seeds and in Sri Lanka as Sau. It is traditionally cooked and eaten in various forms, such as rolled into balls, porridge and as a pancake. The largest supply of sago comes from East Asia.
